Banana Fritters with Tiger Beer Batter and Mandarin Beer Jam Jelly

Serves ~6 as part of a shared meal





Ingredients:
Mini banana, peeled & coated lightly with Self-Raising Flour, 6 pc


Beer batter:
SR Flour, 150g
Plain flour, 150g
Sugar, 1 tsp
Salt, pinch
Egg, beaten, ~60g size, 1 unit
Tiger Beer, 375ml


Jelly:
Orange juice, 100ml
Marmalade jam, 3 tbsp
Vanilla sugar (refer cooking tips), 1 tsp
Zest from 1 lime
Tiger Beer, 100ml
Mandarin orange, 1 can
Gelatin leaf, presoaked in ice cold water, 4 pcs






Method:
1. Prepare jelly. 
(a) Mix orange juice, marmalade, vanilla sugar, lime zest and Tiger Beer in a saucepan and bring to boil.  Lower heat and allow to simmer for 5 mins before off heat.
(b) Strain boiled mixture.  Mix mandarin orange and gelatin leaves with strained mixture, then pour into serving glass.  Leave to set for 1 hr.


2. Prepare beer batter.  Mix dry ingredients together with beaten egg.  Add in beer last and mix well to achieve smooth batter that does not easily drip off item to be coated.


3. Fry banana.  Coat pre-floured banana in beer batter and deep fry in oil (of at least 2 inches deep) at ~190 degC till golden brown.  Drain excess oil.






Serving:
1. Serve fried beer battered banana hot with beer jelly.
