Winter Melon Scallop Slimming Soup

Source: Good Food Fun Cook 餐餐宝, 餐餐好 Episode 1




Serves ~8 as part of a shared meal

Ingredients:
Winter melon, ~3 inches thick of middle section, 1 unit
Lean pork meat, cut into 1x1x1 cm3 cubes, ~300g
Carrot, 2 pcs
Barley (preferred China origin), 1 palmful
Dry scallop, 1 palmful
Dry red dates, 4 pcs
Wolfberries (枸杞子), 1 palmful



Method:
1. Soak barley, dry scallops, red dates and wolberries in cold water.

2. Cut lean meat as illustrated.  Set aside for later use.


3. Prepare winter melon.  Cut per illustrated. Set aside for later use.


4. Prepare carrot.  Remove skin and cut into chunks. Set aside for use late.


5. Parboil cut carrots and lean mean in boiling water to remove blood and unpleasant taste.

6. Boil all ingredients in soup and simmer for 2 hrs.
