How to Make Cornstarch/Water Mixture to Use as Thickening Agent?

This is a tip on how to make cornstarch/water mixture to be used as thickening agent in most Chinese cooking.





Method:
1. Recommended mixing ratio of cornstarch flour to cold water is 1:2 or 1:4, i.e. 1 tsp cornstarch flour to 2 (or 4) tsp cold water.

2. When use cornstarch/water mixture to thicken soup/gravy, stir mixture well first (as content will settle on standing) before adding in slowly to stirring soup/gravy.
